- 120 g Unsalted Butter (softened, cut into cubes)
- 120 ml Heavy Cream (cold)
- 1 tsp Salt (divided between mash and sauce)
- 1 tsp Black Pepper (divided between mash and sauce)
- 2 tbsp Olive Oil (for sautéing)
- 2 medium Onion (finely diced)
- 2 sticks Celery Sticks (finely chopped)
- 2 medium Carrot (peeled and diced)
- 900 g Lamb Mince (80% lean; ground lamb)
- 2 tbsp Worcestershire Sauce
- 1 liter Beef or Lamb Stock (low‑sodium)
- 2 tbsp Cornflour (heaping; for slurry)
- 4 tbsp Cold Water (for cornflour slurry)
Instructions
Prep Potatoes
Peel and chop the floury potatoes into even chunks and place them in a large pot. Cover with cold water.

Boil Potatoes
Bring the pot to a boil, then reduce to a simmer and cook for about 15 minutes, or until a knife slides easily through the pieces.

Preheat Oven
Preheat the oven to 200°C (400°F).

Sauté Vegetables
