- 1 inch Fresh Ginger (peeled and roughly chopped)
- 1/2 teaspoon Salt (or to taste)
- 1/2 cup Water (adjust for desired consistency)
- 1 teaspoon Oil (Sesame or Sunflower) (for tempering)
- 1/2 teaspoon Mustard Seeds (dry roasted)
- 1/2 teaspoon Urad Dal (Split Black Gram) (dry roasted, adds crunch)
- 6 pieces Curry Leaves (fresh)

Gather Ingredients
Measure all ingredients and have them within arm’s reach before you start blending.

Blend the Base
Add grated coconut, roasted chana dal, green chilies, ginger, salt and water into the blender. Blend until smooth, adding more water if needed to reach a pourable consistency.

Prepare Tempering (Tadka)
Heat oil in a small pan over medium heat. Add mustard seeds; when they start to pop, add urad dal and curry leaves. Fry for about 30 seconds until the dal turns golden.

Combine Tempering with Chutney
Pour the hot tempering over the blended coconut mixture. Stir well to incorporate the flavors.
