Ingredients
- 1 kg Okra (washed, dried and cut into quarters lengthwise)
- 4 tablespoons Gram Flour (sifted)
- 1 tablespoon Salt
- 1 tablespoon Kashmiri Red Chili Powder (for bright red color and mild heat)
- 1 tablespoon Fresh Coriander Leaves (finely chopped, plus extra for garnish)
- 2 cups Cooking Oil (vegetable or canola oil, divided between two pans)
- 8 cloves Garlic (sliced lengthwise)
- 1 tablespoon Cumin Seeds
- 4 medium Onion (cut into thick slices)
- 1 teaspoon Asafoetida (Hing)
- 1 teaspoon Garam Masala
- 1 teaspoon Amchur (Dry Mango) Powder (or khatai powder for tanginess)
- 2 tablespoons Lemon Juice (freshly squeezed)
Instructions
Wash, Dry and Cut Okra
Rinse the okra under running water, pat dry with a clean kitchen towel, then cut each pod lengthwise into four equal pieces.

Prepare the Besan Coating
In a mixing bowl combine gram flour, salt, Kashmiri red chili powder and chopped fresh coriander. Mix well.

Coat the Okra
Add the cut okra pieces to the bowl and toss until each piece is evenly coated with the besan mixture.

First Fry – Crisp the Okra
Heat 1 cup of cooking oil in a wide frying pan over medium flame. When the oil shimmers, add the coated okra in batches and fry for about 5 minutes until they turn a bright reddish‑orange color.

Set Aside Fried Okra
Using a slotted spoon, transfer the fried okra to a bowl and set aside.

Temper Garlic and Cumin
In a second pan, heat the remaining 1 cup of oil over medium flame. Add the sliced garlic and cumin seeds; roast lightly until the garlic turns golden and aromatic.

Sauté Onions
Add the thick onion slices to the pan and sauté for 2‑3 minutes until they soften but retain their color.

Add Aromatics and Spices
Stir in asafoetida, garam masala and amchur (dry mango) powder. Mix quickly for 1 minute.

Combine Okra with Tempered Mixture
Return the previously fried okra to the pan, gently toss to coat with the onion‑garlic‑spice mixture. Reduce flame to medium‑low, cover and cook for 5 minutes so the flavors meld.

Turn off the heat, drizzle fresh lemon juice over the dish, sprinkle extra chopped coriander and give a final gentle mix.
