Troubleshooting
The chicken is dry after cooking.
Check the oven temperature and do not exceed 25 minutes per side. Letting the chicken rest allows the juices to redistribute.
The spices do not stick to the chicken.
Make sure the chicken is well dried before adding oil and spices. Add a little more oil if needed.
The chicken is not browned enough.
Increase the temperature to 200 °C for the last 5 minutes or briefly broil the dish.
Storage
Refrigerator: Store in an airtight container 3 to 4 days.
Freezer: Vacuum‑seal or place in a freezer bag for up to 2 months.
Room temperature: Do not leave at room temperature for more than 2 hours.
Make-Ahead Tips
- Pre‑mix the spices in a small bowl and keep them in an airtight jar.
- Marinate the chicken the day before for even more intense flavors.
- Cut the onions in advance and store them in cold water.
