- ¼ cup Red Onion (diced)
- 2 tablespoons Fresh Cilantro (chopped)
- 2 tablespoons Lime Juice (freshly squeezed (about 1 lime))
- 1 pound Ground Beef (80% lean)
- 2 tablespoons Tomato Paste
- ¼ cup Water
- 1 cup Shredded Mexican Blend Cheese
- ½ cup Guacamole (store‑bought or homemade)
- ½ cup Sour Cream
Instructions
Scrub the potatoes
Rinse the Yukon Gold potatoes under cold water and scrub the skins with a potato scrub brush until clean.
