Ingredients
- 2 cans Cannellini Beans (15‑oz cans, drained and rinsed)
- 1 medium Cucumber (seeded and diced)
- 2 cups Arugula (loosely packed)
- 1 cup Marinated Artichoke Hearts (chopped)
- 3 stalks Scallions (thinly sliced)
- 2 tablespoons Fresh Parsley (chopped)
- 2 tablespoons Fresh Basil (chopped)
- 0.5 cup Feta Cheese (crumbled)
- 2 tablespoons Lemon Juice (freshly squeezed)
- 1 teaspoon Lemon Zest (fine zest)
- 2 cloves Roasted Garlic (soft, mashed)
- 1 teaspoon Dijon Mustard
- 3 tablespoons California Extra Virgin Olive Oil (good quality)

- to taste Black Pepper (freshly ground)
- 2 cloves Garlic Slices (thinly sliced for frying)
Instructions
Prepare Beans
Open the two cans of cannellini beans, pour into a colander, rinse under cold water and let drain.

Chop Vegetables & Herbs
Dice the cucumber, thinly slice the scallions, chop the arugula roughly, and coarsely chop the parsley and basil. Roughly chop the marinated artichoke hearts.

Make the Dressing
In the small bowl combine lemon juice, lemon zest, mashed roasted garlic, Dijon mustard, and olive oil. Whisk vigorously until the mixture emulsifies and thickens.
