Ingredients
- 4 cups Watermelon (seedless, cut into 1‑inch cubes)
- 0.75 cup Sweet Onion (thinly sliced; can use red onion or sweet white onion)
- 2 pieces English Cucumber (seeded, quartered)
- 2 tablespoons Fresh Mint (chopped)
- 2 tablespoons Fresh Cilantro (chopped)
- 2 tablespoons Fresh Lime Juice (about 1 lime)
- 1 teaspoon Lime Zest (zested from same lime)
- 0.25 cup Olive Oil (extra virgin)
- to taste pinch Salt (sea salt)
- to taste pinch Freshly Ground Black Pepper (freshly ground)
- 0.5 cup Feta Cheese (crumbled)
Instructions
Make Lime Dressing
In a small bowl combine fresh lime juice, lime zest, olive oil, a pinch of salt and pepper. Whisk vigorously until the mixture emulsifies and looks slightly thickened.

Cut the seedless watermelon into uniform 1‑inch cubes and measure out 4 cups.

Quarter and Seed Cucumbers
Trim the ends off each English cucumber, halve lengthwise, scoop out the seeds, then quarter each half.

Thinly Slice Sweet Onion
Peel the sweet onion and slice it into thin half‑moon strips.

Roughly chop the fresh mint and cilantro leaves.

Combine Ingredients
