Using a mandolin set between 1/8 and 1/4 inch or a sharp knife, slice the cucumbers into uniform rounds.

In a saucepan, add ½ cup water, ½ cup apple cider vinegar, ½ cup whiskey, 1 tbsp kosher salt, 2 tsp whole peppercorns, 2 tsp coriander seeds, 1 tsp mustard seeds, the chopped dill, chopped garlic, and 1 tbsp honey.
