- 2 tbsp Za'atar spice mix (Store‑bought or homemade (thyme, sumac, sesame seeds, oregano))
- 2 tbsp Olive oil (Extra‑virgin, divided (1 tbsp for chicken, 1 tbsp for chickpeas))
- 3 tbsp Lemon juice (Freshly squeezed, seeds removed)
- 0.5 tsp Salt (Divided between chicken and sauce)
- 1 15‑oz can Canned chickpeas (Drained, rinsed, and patted dry)
- 1 tsp Ground cumin
- 1 tsp Smoked paprika
- 0.5 tsp Chili powder
- 0.5 tsp Garlic powder
- 1 cup Greek yogurt (Plain, full‑fat for creaminess)
- 3 large Garlic cloves (Minced)
- 1 medium Cucumber (Diced)
- 1 cup Red cabbage (Shredded)
- 4 pieces Pita bread (Whole‑wheat or regular, warmed)
Instructions
Marinate the chicken
In a bowl combine chicken pieces, za'atar, 1 tbsp olive oil, 2 tbsp lemon juice, and ½ tsp salt. Toss to coat and let sit while you prep the rest.

Prepare the yogurt‑lemon sauce
In a small bowl whisk together Greek yogurt, minced garlic, 1 tbsp lemon juice, a pinch of salt and pepper. Adjust seasoning to taste.

Chop vegetables and shred cabbage
Dice the cucumber, shred the red cabbage, and set aside in separate bowls.
