- 1 tsp Cocoa powder (heaped)
- 2 tbsp Honey
- 10 g String cheese (cheese stick) (small piece, adds salty bite to sweet filling)

Instructions
Make the dough
In a mixing bowl combine 300 g flour and 0.5 tsp salt. Gradually add 200 ml lukewarm water while stirring until a shaggy dough forms. Knead on a lightly floured surface for 5–6 minutes until smooth and elastic.

Rest the dough
Cover the dough with a clean kitchen towel and let it rest for 15 minutes at room temperature. This relaxes the gluten and makes rolling easier.

Prepare potato & pepper paste filling
Melt 15 g butter in a skillet over medium heat. Add half of the diced onion and sauté until translucent. Add the diced potato, 1 tsp red pepper paste, and a pinch of red pepper flakes. Cook, stirring, for about 8 minutes until the potato is tender and the mixture is fragrant. Season with a pinch of salt if desired. Remove from heat and let cool.

Prepare cheese filling
In a bowl combine 100 g crumbled white cheese, 1 tbsp chopped parsley, a pinch of red pepper flakes, and, if using, 30 g shredded mozzarella. Mix gently.

Prepare sweet tahini filling
In a small bowl whisk together 2 tbsp tahini, 1 heaped tsp cocoa powder, 2 tbsp honey, and the small piece of string cheese until smooth.

Prepare minced meat filling
Heat a skillet over medium‑high heat, add a splash of oil, then add 200 g minced meat and the remaining diced onion. Cook, breaking up the meat, until the liquid evaporates and the meat browns, about 10 minutes. Season with salt and pepper. Let cool slightly.

Divide and roll the dough
Turn the rested dough onto a lightly floured surface. Divide into four equal balls. Using a rolling pin (or a clean bottle), roll each ball into a thin oval about 20 cm long and 2 mm thick.

Assemble the gözleme
Place a generous spoonful of one filling on half of each rolled oval, leaving a 1‑cm border. Fold the dough over to create a half‑moon shape and press the edges with a fork to seal.

Cook the gözleme
Heat a cast‑iron skillet over medium heat. Add a small knob of butter and swirl to coat. Place one gözleme in the pan, cook 3‑4 minutes until golden brown, then flip and cook the other side another 3‑4 minutes. Add a little more butter as needed. Repeat for the remaining pieces.
