Ingredients
- 5 Tbsp Unsalted Butter (divided, melted for sauté and frying)
- 1 Small Onion (peeled and diced)
- 1 stalk Green Onion (chopped)
- 1.5 cup Carrots (sliced thin)
- 1.5 cup Bell Peppers (any color, sliced)
- 3 tsp Salt (table salt)
- 1.5 tsp Turmeric Powder (ground)
- 2 cup White Basmati Rice (unsoaked, rinsed)
- 4 cup Chicken Broth (low‑sodium)
- 2 large Chicken Breast (skinless, boneless, about 500 g total)
- 1 Tbsp Smoked Paprika (sweet smoked)
- 1 tsp Ground Coriander
- 0.5 tsp Ground Ginger Powder
- 1 tsp Garlic Powder
- 1 tsp Dried Shallots
- 1 Tbsp Vegetable Oil (for frying chicken)
- 2 Garlic Cloves (minced)
- 2 Medium Tomatoes (diced)
- 250 ml Water (for simmering tomatoes)
Instructions
Sauté Aromatics
Melt 3 Tbsp butter in the large skillet over low heat. Add the diced small onion and chopped green onion; stir‑fry for 3–4 minutes until softened.

Add Carrots and Peppers
Add the sliced carrots and bell peppers to the skillet. Stir‑fry for 2–3 minutes on low heat, keeping the vegetables crisp‑tender.

Season the Veggies
Stir in 1 ½ tsp salt and ½ tsp turmeric powder; mix well.

Toast the Rice
Add the rinsed basmati rice to the skillet and stir‑fry for about 3 minutes over medium heat, allowing each grain to coat with butter.

Add Liquid and Simmer
