Ingredients
- 2 pints Cherry Tomatoes (small, sweet and juicy; halved)
- 0.5 cup Extra Virgin Olive Oil (divided, use high‑quality oil for best flavor)
- 200 g Feta Cheese (block, preferably Greek or French; keep whole for baking)
- 1 tsp Sea Salt (adjust to taste)
- 0.5 tsp Freshly Ground Black Pepper (plus extra for topping feta)
- 0.5 cup Fresh Basil Leaves (torn)
- 2 cloves Garlic Cloves (minced)
- 12 oz Cavatappi Pasta (or any short pasta; cook al dente)
- 0.5 cup Pasta Water (reserved from cooking pasta)
Instructions
Preheat Oven
Set the oven to 400°F (200°C) and let it preheat while you prepare the tomatoes and feta.
Time: PT5M
Temperature: 400°F
Prepare Tomatoes
Wash the cherry tomatoes, halve them, and place them in a large mixing bowl. Drizzle with 3 Tbsp of the olive oil, sprinkle with salt and pepper, and toss until evenly coated.
Time: PT5M
Transfer to Baking Dish
Spread the seasoned tomatoes evenly in the oven‑safe baking dish, creating a small well in the center.
Time: PT2M
Add Feta Block
Place the 200 g block of feta cheese in the center of the tomato bed. Drizzle the remaining 3 Tbsp olive oil over the feta and add a pinch of fresh black pepper on top.
Time: PT2M
Bake
Put the baking dish in the preheated oven and bake for 35 minutes, until the tomatoes are blistered and the feta is soft and golden around the edges.
Time: PT35M
Temperature: 400°F
Cook Pasta
While the feta bakes, bring a large pot of salted water to a boil. Add the cavatappi and cook al dente according to package directions (about 10 minutes). Reserve ½ cup of the pasta water, then drain.
Time: PT10M
Temperature: 212°F
Finish Sauce
Remove the baking dish from the oven. Using a fork, gently mash the roasted tomatoes and melt the feta together until a smooth, creamy sauce forms. Stir in the torn basil leaves and minced garlic.
Time: PT5M
Combine Pasta and Sauce
Add the cooked cavatappi to the sauce, tossing to coat. If the sauce seems thick, drizzle in the reserved pasta water a little at a time until you reach a glossy consistency.
Time: PT3M
Serve
Plate the pasta, garnish with a few extra basil leaves and a drizzle of olive oil if desired. Serve immediately while hot.
Time: PT2M
