Ingredients
- 1 whole Onion (peeled and diced)
- 3 cloves Garlic (peeled and grated)
- 1 whole Jalapeno (seeded, sliced, minced)
- 1 tsp Chili Powder (ground)
- 1 tsp Cumin (ground)
- 28 oz Crushed Tomatoes (canned)
- 15 oz Corn (canned, rinsed and drained)
- 15 oz Black Beans (canned, rinsed and drained)
- 32 oz Chicken Broth (low-sodium)
- 1 cup Water (optional to reach desired volume)
- 2 cups Rotisserie Chicken (shredded, half of a whole chicken)
- 1 whole Lime (juiced)
- 0.25 bunch Cilantro (chopped fine)
- 1 tbsp Olive Oil (for sautéing)
Instructions
Preheat Pot and Add Oil
Place the Dutch oven or soup pot over medium heat and add 1 tablespoon of olive oil, letting it heat for about 2 minutes.

Sauté Onion
Add the diced onion to the hot oil and sauté, stirring occasionally, until softened and translucent, about 3 minutes.

Add Garlic and Jalapeno
