- 2 tbsp Olive Oil (for drizzling and marinating)
- 1 tbsp Unsalted Butter (softened)
- 1 cup Cherry Tomatoes (halved; use regular tomatoes diced if out of season)
- 1 tsp Lemon Juice (freshly squeezed)
- 1/4 tsp Salt (to taste)
- 1/8 tsp Black Pepper (freshly ground)
- 5 leaves Fresh Basil Leaves (chopped)
- 4 oz Fresh Mozzarella Cheese (sliced)
- 1/2 cup Marinara Sauce (store‑bought or homemade)
- 2 tbsp Parmesan Cheese (grated)
- 1/4 tsp Dried Oregano (optional)
Instructions
Marinate Tomatoes
In a small bowl combine the halved cherry tomatoes, 1 tbsp olive oil, lemon juice, salt, pepper, and the chopped basil. Toss gently and let sit at room temperature.

Pan‑Toast Sourdough
Heat the skillet over medium heat, add the butter and a drizzle of olive oil. Place the sourdough slices in the pan and cook until golden, about 2 minutes per side, flipping once.

Add Cheese and Melt
Transfer the toasted bread onto a baking sheet. Layer the sliced mozzarella evenly over each slice. Place under a pre‑heated oven at 400°F for 5 minutes, or until the cheese just begins to melt.

Add Sauce, Tomatoes, and Parmesan
