Ingredients
- 1/3 head Green Cabbage (shredded)
- 1/4 teaspoon Salt (for cabbage)
- 2 Cucumber (medium, sliced or grated)
- 1/4 teaspoon Salt (for cucumbers)
- 1/2 Onion (thinly sliced)
- 1 teaspoon Apple Cider Vinegar (warm water mixed in)
- 1/3 head Red Cabbage (shredded)
- 1 Carrot (peeled and grated)
- 20 g Mixed Nuts (walnuts and almonds, roughly chopped)
- 2 cloves Garlic (pressed)
- 2 tablespoons Olive Oil (extra‑virgin preferred)
- 1 tablespoon Honey
- 2 tablespoons Mustard (Dijon or yellow)
- 1 teaspoon Soy Sauce (low‑sodium preferred)
Instructions
Shred Green Cabbage
Remove the outer leaves, halve the cabbage and shred 1/3 of it using a box grater or knife. Place the shredded cabbage in a mixing bowl, add 1/4 tsp salt, toss, and let it sit for 10 minutes.

Prepare Cucumbers
Wash 2 medium cucumbers, slice or grate them, place in a separate bowl, add 1/4 tsp salt, toss and let rest for 5 minutes.

Slice Onion
Thinly slice 1/2 onion and add it to the cabbage bowl.

Shred Red Cabbage
Shred 1/3 head of red cabbage and add it to the main mixing bowl.

Grate Carrot
Peel one carrot, grate it finely, and add to the bowl.

Add Nuts
Add 20 g of mixed walnuts and almonds (roughly chopped) to the salad.
