- Cook the chicken until a light crust forms (step 5).
- Grill the tacos until the tortilla is golden and the cheese melted (step 8).
Chef Tips from the Video
- Use a non‑stick panini press to achieve an evenly golden surface.
- Lightly dust the tortilla with flour before grilling to prevent it from sticking to the press.
- Add a small handful of freshly chopped cilantro to the sauce for a fresh touch.
Troubleshooting
Cheese sauce is too thick.
Add 1‑2 tablespoons of cream or milk, stirring gently until desired consistency is reached.
Tacos become soggy.
Ensure fries and meats are well drained before assembly and grill the tacos immediately after assembling.
Tortilla tears when folding.
Warm the tortilla slightly before assembly to make it more pliable.
Storage
Refrigerator: Cheese sauce 2 days, cooked meats 3 days, fries to be consumed the same day to retain crunch.
Freezer: Marinated raw meats can be frozen for 1 month. Assembled tacos can be frozen uncooked for 2 months, then grilled after thawing.
Room temperature: Unopened tortillas keep for 5 days at room temperature.
Make-Ahead Tips
- Marinate the ground meat and chicken the night before in the refrigerator for more flavor.
- Prepare the cheese sauce ahead of time and gently reheat before serving.
- Cook the fries ahead of time and quickly reheat in the oven or microwave to retain crunch.
