Chef Tips from the Video
- Grate the orange zest just before incorporating it for a fresh aroma.
- Use high‑quality orange blossom water for an authentic fragrance.
- Place the bean near the edge so it is easier to spot during serving.
Troubleshooting
The dough does not rise.
Check that the milk was warm (35 °C) and that the yeast is still active. Use warm water and add a little more sugar to feed the yeast.
The brioche is too dense.
Do not over‑work the dough after the first rise and ensure both rises have doubled the volume. Keep the ambient temperature at 25‑28 °C.
The crust burns before the interior is cooked.
Lower the oven temperature to 140 °C or cover the crown with a sheet of aluminum foil during the last 20 minutes.
Storage
Refrigerator: Store in an airtight container 2 to 3 days.
Freezer: Wrap tightly and freeze up to 1 month.
Room temperature: Consume the same day or within 4 hours if kept at room temperature.
Make-Ahead Tips
- Prepare the dough the day before, let it rise once, then refrigerate overnight; let it rise a second time before baking.
- The crowns can be frozen after baking; gently reheat in the oven before serving.
