- 1 Medium Onion (peeled and halved; one half for sauté, one half diced later)
- 2 Jalapeño Peppers (stemmed; one half sliced for sauté, other half diced later)
- 1 Tbsp Vegetable Oil (for sautéing vegetables)
- 1 lb American Cheese (shredded)
- 4 oz Pepper Jack Cheese (shredded)
- 4 oz Sharp Cheddar Cheese (shredded)
- 1 Large Tomato (diced)
- 1 can (12 oz) Evaporated Milk (full‑fat for creaminess)
- 1.5 lb Ground Beef (80% lean, cooked and crumbled)
- 2 tsp Cajun Seasoning
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 0.5 tsp Black Pepper (freshly ground)

Instructions
Prepare Vegetables and Cheese
Halve the onion and jalapeños. Slice one half of each (onion and jalapeños) into thin strips for sautéing. Dice the remaining half of the onion and jalapeños. Dice the tomato. Shred the American, pepper jack, and sharp cheddar cheeses.

Sauté Half of the Vegetables
Heat 1 tbsp vegetable oil in a large skillet over medium heat. Add the sliced onion and jalapeño strips. Cook, stirring occasionally, until softened and fragrant, about 4–5 minutes.

Cook Ground Beef with Seasonings
Push the sautéed vegetables to the side of the skillet. Add the ground beef, breaking it up with the spoon. Sprinkle Cajun seasoning, onion powder, garlic powder, black pepper, and salt. Cook, stirring, until the beef is fully browned and no longer pink, about 8–10 minutes.
