Ingredients
- 2 pieces Sweet Potato (large, washed and scrubbed)
- 1 tablespoon Ground Black Pepper (optional, freshly ground)
- 1.5 teaspoon Paprika (smoked or sweet)
- 2 tablespoon Sour Cream (divided, for mixing and topping)
- 1 tablespoon Unsalted Butter (softened, cut into cubes)
- 0.25 cup Shredded Cheddar Cheese (grated, divided)
- 2 tablespoon Sweet Corn (canned or frozen, drained)
- 1 tablespoon Olive Oil (for sautéing)
- 8 pieces Button Mushrooms (quartered, fresh)
- 0.5 piece Onion (medium, chopped)
- 2 sprigs Rosemary (fresh)
- 1 tablespoon Balsamic Vinegar (for mushroom topping)
- 1 clove Garlic (minced)
- 1 tablespoon Fresh Parsley (chopped, for garnish)
Instructions
Prepare Sweet Potatoes
Wash and scrub the sweet potatoes thoroughly, then pat dry.

Pierce Potatoes
Prick each sweet potato all over with a fork to allow steam to escape.

Microwave Sweet Potatoes
Place the potatoes on a microwave‑safe plate. Microwave on high for 7½ minutes, flip, then microwave another 7½ minutes until very soft.

Cool and Scoop Flesh
Allow potatoes to cool for 3‑4 minutes, then cut off the top and scoop out most of the orange flesh into a mixing bowl, trying not to tear the skin.

Make Sweet Potato Filling
To the scooped sweet potato, add ground black pepper, paprika, 2 Tbsp sour cream, butter, shredded cheese, and sweet corn. Mix with a spatula until smooth.
