- 400 ml Cream (Any cream; divided (300ml for custard, 100ml for ganache))
- 1 teaspoon Vanilla extract
- 200 gram Chocolate (Any chocolate of choice (dark, milk, or semi-sweet))
- 400 ml Whipping cream (For whipped cream layer)
- 1 tablespoon Powdered sugar
- 2 tablespoon Milk powder
- 2 tablespoon Maple syrup
Instructions
Mix Pumpkin Custard Base
In a medium saucepan, combine cinnamon, nutmeg, cloves, ginger, allspice, sugar, cornstarch, salt, and 1 teaspoon pumpkin spice mix. Whisk to combine. Add egg yolks, pumpkin puree, 300ml cream, and vanilla extract. Whisk until smooth.

Cook Pumpkin Custard
Place saucepan over medium heat. Stir constantly with a whisk until the mixture thickens and just comes to a simmer, about 8-10 minutes. Do not let it boil. Remove from heat.
