Instructions
Cooking the potatoes
Place the whole potatoes (with skin) in a large pot of salted boiling water or in a steamer and cook until tender (about 20 minutes).

Drain the potatoes, let them warm for a few minutes, then peel them. Pass them through a potato ricer adding salt, pepper, nutmeg and a drizzle of olive oil if desired.
