Instructions
Rinse the Sushi Rice
Place the 1 cup of sushi rice in a fine‑mesh sieve and rinse under cold running water until the water runs clear, then drain well.

Cook the Sushi Rice
Transfer the rinsed rice to a rice cooker or pot, add 1¼ cups of water, and cook according to the rice cooker instructions or bring to a boil, cover, and simmer on low for 15‑18 minutes until tender. Let it rest, covered, for 5 minutes.

Prepare the Fillings
While the rice rests, slice the avocado, julienne the carrot and cucumber, and lightly sprinkle the vegetables with ½ tsp salt.
