- 0.125 teaspoon Black Pepper (freshly ground)
- 3.75 pounds Watermelon (seedless, rind removed, cut into wedges and sliced)
- 5 cucumbers Persian Cucumbers (thin‑skinned, sweet, sliced thin on the bias)
- 0.25 cup Fresh Parsley Leaves (loosely packed, for garnish)
- 4 ounces French Feta Cheese (crumbled)

Slice the Shallot
Trim the shallot and slice it thin lengthwise into elegant ribbons.

In a small bowl combine the sliced shallot, 3 Tbsp olive oil, 3 Tbsp fresh lemon juice, 1/8 tsp salt, and 1/8 tsp black pepper. Mix well and set aside to let the shallot mellow.
