- 1 large Tomato (seeded and sliced into strips)
- 1 tbsp Butter (unsalted, cut into pieces)
- 2 tbsp Fresh Coriander Leaves (chopped)
- 1 tbsp Lemon Juice (freshly squeezed)
- 1 tsp Salt (for filling, adjust to taste)
- 1 tsp Kitchen King Masala (or any garam masala blend)
- 0.5 tsp Chaat Masala
- 1 tsp Roasted Cumin Powder (bhuna jeera)
- 1 tsp Kashmiri Red Chili Powder (mildly spicy and red)
- 1 tsp Coriander Powder
- 100 g Paneer (sliced thinly (optional))
- 50 g Mozzarella Cheese (shredded (optional))
Instructions
Make the dough
In a mixing bowl combine 2 cups all‑purpose flour, 2 cups whole‑wheat flour, 1 tsp salt and 2 tbsp oil. Mix well.

Add water and knead
Gradually add warm water (about 1 cup) while mixing. Knead until the dough is smooth, soft and non‑sticky.

Rest the dough
Cover the dough with a damp cloth and let it rest for 15‑20 minutes.

Divide and roll the rotis
Divide the dough into 8‑10 equal balls. Lightly flour a surface, roll each ball into a thin circle about 15‑18 cm in diameter.

Cook the rotis
Heat a tawa over medium heat. Cook each roti for ~45 seconds on each side until light brown spots appear. Do not press the roti with a cloth; just flip gently.
