Critical Steps — Do Not Skip

  • Achieve the right batter consistency (neither too liquid nor too thick).
  • Cook the potatoes until tender before assembling.
  • Maintain the oil at 180°C for even frying.

Chef Tips from the Video

  • Lightly sprinkle chili powder on the pakoras just before serving for extra heat.
  • Use slightly stale bread so it absorbs the filling better without falling apart.

Troubleshooting

The batter is too runny and doesn't coat the slices.

Add 1‑2 tbsp extra chickpea flour and mix until a thick consistency is achieved.

The pakoras are pale and greasy.

Ensure the oil is at 180°C before dipping the pakoras; a lower temperature absorbs oil.

The filling crumbles during assembly.

Slightly mash the filling with the back of a spoon to make it more compact, or add a tablespoon of plain yogurt (plant-based option).

Storage

Refrigerator: Store the pakoras in an airtight container for up to 2 days. Reheat in the oven at 180°C to restore crispness.

Freezer: Pack the cooled pakoras in a freezer bag; they keep for 1 month. Thaw in the refrigerator then reheat in the oven.

Room temperature: Consume within 2 hours of frying, otherwise they lose their crispness.

Make-Ahead Tips

  • Prepare the batter the day before and keep it in the refrigerator; it improves.
  • The filling can be cooked ahead of time and reheated before assembling.
