Ingredients
- 2 Onion (thinly sliced into lamellae)
- 2 Tbsp Olive Oil (for caramelizing onions)
- 300 g Ground Beef (80/20 lean-to-fat ratio, formed into two patties)
- to taste Salt
- to taste Black Pepper
- 2 slices Cheddar Cheese (placed on each patty while cooking)
- 2 Tbsp Mayonnaise (base for spicy mayo)
- 1 tsp Hot Sauce (mix into mayo for spice)
- 30 g Tex-Mex Cheese Blend (sprinkled on puff pastry before baking)
- 1 Puff Pastry Sheet (store‑bought, thawed if frozen)
- 1 Egg Yolk (beaten, for egg wash)
- 1 tsp Sesame Seeds (sprinkled on top before baking)
Instructions
Slice the onions
Trim the ends of the onions and slice them very thinly into lamellae using a sharp chef's knife.
Time: PT5M
Caramelize the onions
Heat 2 Tbsp olive oil in a frying pan over medium‑high heat. When shimmering, add the onion lamellae, cover the pan, and stir every few minutes. If the onions start to stick, add a splash of water. Cook until deep golden‑brown and sweet, about 12 minutes.
Time: PT12M
Form the beef patties
Place the ground beef in a bowl, season with salt and pepper (or any preferred spices), and divide into two equal portions. Gently shape each portion into a flat patty about 1 cm thick, pressing lightly with your hands.
Time: PT5M
Cook the first side of the patties
Add the patties to the hot pan (no extra oil needed). Cook for 3 minutes without moving them. Then flip each patty, place a slice of cheddar on top, and add a generous spoonful of caramelized onions.
Time: PT3M
Stack the second patty and finish cooking
Place the second patty on top of the first, add the second slice of cheddar, and another spoonful of caramelized onions. Cook for another 3 minutes until the second side is browned and the cheese is fully melted.
Time: PT3M
Set the cooked burger aside
Remove the stacked patties from the pan and place on a plate. Keep warm while you prepare the pastry.
Time: PT1M
Prepare the spicy mayo
In a small mixing bowl, combine 2 Tbsp mayonnaise with 1 tsp hot sauce. Stir until smooth.
Time: PT2M
Assemble on the puff pastry
Lay the puff pastry sheet on a parchment‑lined baking sheet. Spread the spicy mayo evenly over the surface, leaving a 2‑cm border. Sprinkle the Tex‑Mex cheese blend over the mayo. Place the stacked burger in the centre.
Time: PT5M
Fold and finish the pastry
Fold the two opposite sides of the pastry over the burger, overlapping slightly to seal. Trim any excess dough, then brush the exposed pastry with the beaten egg yolk. Lightly score the top with a pastry wheel (do not cut through) and sprinkle sesame seeds.
Time: PT5M
Bake the pastry burger
Preheat the oven to 190 °C. Bake the assembled pastry burger for 15 minutes, or until the pastry is puffed and deep golden.
Time: PT15M
Temperature: 190°C
Rest and serve
Remove from the oven, let rest for 1 minute, then slice in half and serve immediately.
Time: PT1M
