Chef Tips from the Video
- After searing, deglaze the pan with a tablespoon of water before adding the sauce to capture all browned bits.
- For extra depth, add a splash of Shaoxing wine to the simmering sauce.
- Use a meat thermometer to confirm the ribs have reached 71°C before serving.
Troubleshooting
Ribs are tough after simmering.
Ensure the simmer is truly low and gentle; if the liquid evaporates, add a splash of water or broth and continue cooking.
Sauce is too thick.
Thin with a little water or chicken stock before baking; the cornstarch may have over‑gelled.
Ribs are not caramelized enough.
Increase oven time by 5‑10 minutes or finish under the broiler, watching closely.
Storage
Refrigerator: Store leftover ribs in an airtight container for up to 3 days.
Freezer: Portion and freeze for up to 2 months; reheat gently on low heat.
Room temperature: Do not store at room temperature; discard if left out over 2 hours.
Make-Ahead Tips
- Prepare the Millennium sauce a day ahead and freeze it in portioned bags.
- The ribs can be seared and simmered a day before; reheat in the oven for 10‑15 minutes before serving.
