Ingredients
- 6 pieces Chicken Thighs (boneless, skinless)
- 1 tsp Ground Cumin
- 4 cloves Garlic (minced)
- 1 tsp Dried Oregano
- 2 tsp Kosher Salt (plus extra for seasoning during cooking)
- 1 tsp Ground Black Pepper (freshly ground)
- 1 tbsp Chili Powder
- 2 tbsp Olive Oil (extra virgin recommended)
- 1 can (7 oz) Chipotle Peppers in Adobo Sauce (use 4 peppers and all the sauce, discard remaining peppers)
- 0.75 cup Water (room temperature)
Instructions
Blend Marinade
Add cumin, minced garlic, dried oregano, kosher salt, black pepper, chili powder, olive oil, chipotle peppers with all the adobo sauce, and water into the blender. Blend on low‑medium for 1‑2 minutes until smooth.

Marinate Chicken
Place the chicken thighs in a gallon‑size Ziploc bag, pour in the blended marinade, seal removing as much air as possible, and massage to coat evenly.

Preheat Skillet
Remove the chicken from the fridge, let sit 10 minutes while you preheat a cast‑iron skillet over medium to medium‑high heat.
