Time: PT5M
Season Chicken
Pat chicken thighs dry with paper towels. Rub the spice mixture onto both sides of each thigh, ensuring full coverage.
Time: PT5M
Marinate

Time: PT30M
Prep Aromatics
Finely mince the large onion and garlic cloves. Set aside.
Time: PT5M
Sear Chicken
Heat vegetable oil in the oven‑safe skillet over medium‑high heat until shimmering. Place chicken thighs skin‑side down and sear for 3 minutes, then flip and sear the other side for another 3 minutes until both sides are golden brown.
Time: PT6M
Remove Chicken & Clean Pan
Transfer the seared thighs to a plate. Using a paper towel, wipe out any burnt bits, leaving a thin layer of oil in the skillet.
Time: PT2M
Make Roux
Add butter to the skillet and melt over medium heat. Stir in the minced onion and cook, stirring occasionally, for about 5 minutes until softened and lightly caramelized.
Time: PT5M
Add Garlic & Flour

Time: PT2M
Create Sauce Base
Gradually whisk in chicken broth, continuing to stir until the mixture thickens and is smooth.
Time: PT3M
Finish Sauce
Stir in whole milk, heavy cream, grated Parmesan, chopped fresh basil, and chopped parsley. Cook for 1 minute until everything is well incorporated and the cheese melts.
Time: PT2M
Combine Chicken & Sauce
Return the seared chicken thighs to the skillet, skin side up. Spoon some of the sauce over each piece and add any juices that accumulated on the plate.
Time: PT2M
Bake
