- 2 lb Potatoes (Blue Royal, Sebago, or Yukon Gold; peeled and cut into 2‑inch chunks)
- 2 cup Beef Tallow (Rendered beef fat, solid at room temperature)
- 2 tablespoon Salt (For soaking potatoes and final seasoning)
- 1 tablespoon Fresh Rosemary (Finely chopped)
Instructions
Prep Potatoes
Wash, peel, and cut the potatoes into 2‑inch chunks. Place them in a large bowl of cold water with 2 Tbsp salt and let sit for at least 10 minutes.

Boil Potatoes
Drain the soaking water, add the potatoes to a large pot of fresh salted water, bring to a boil, and cook for about 15 minutes until just tender.

Roughen the Potatoes
Drain the boiled potatoes in a colander, return them to the pot, and shake vigorously for a few seconds to roughen the edges.

Heat Beef Tallow
Pre‑heat the oven to 200°C. Place the deep pan with 2 cups beef tallow inside and heat until the fat is shimmering (about 200°C).

Fry the Potatoes
Carefully lower the roughened potatoes into the hot tallow, reduce oven temperature to 180°C, and fry for 15‑20 minutes, turning every 10 minutes for even browning.
