Ingredients
- 3 medium Russet Potatoes (peeled and cut into 1/4‑inch sticks)
- 2 tablespoons Cornstarch (for coating the fries)
- 1 teaspoon Salt (or to taste)
- as needed cup Vegetable Oil (for deep‑frying; use a high‑smoke‑point oil)
- 2 tablespoons Unsalted Butter (cut into pieces)
- 4 cloves Garlic Cloves (pressed or minced)
Instructions
Prep the Potatoes
Peel the potatoes (if desired) and cut them into uniform 1/4‑inch sticks.

Par‑boil the Fries
Bring a large pot of salted water to a boil, add the potato sticks and boil for 3–4 minutes until just tender.

Coat with Cornstarch and Salt
Transfer the drained fries to a mixing bowl, sprinkle 2 Tbsp cornstarch and 1 tsp salt, then toss until evenly coated.
