- 0.5 cup Red Enchilada Sauce (store‑bought; can substitute crushed tomatoes)
- 1 tsp Chili Powder
- 1 tsp Ground Cumin
- 0.5 tsp Garlic Powder
- 0.5 tsp Salt
- 0.25 tsp Black Pepper (freshly ground)
- 8 pieces Corn Tortillas (6‑inch, soft)
- 2 tbsp Avocado Oil (for spraying both sides of tortillas)
- 1 cup Shredded Mexican Blend Cheese (or cheddar)
- 0.5 cup Cilantro (loosely packed, fresh leaves only)
- 1 piece Avocado (ripe, peeled and pitted)
- 1 cup Plain Greek Yogurt (full‑fat or low‑fat)
- 1 piece Lime (juiced)
- 1 tsp Honey (optional, for a touch of sweetness)
Instructions
Sauté the onion
Heat a skillet over medium heat, add a splash of oil, then add the diced onion. Cook, stirring occasionally, until fragrant and translucent.

Brown the ground beef
Add the ground beef to the skillet with the onion. Break it up with a spatula and cook until fully browned, about 5 minutes.
