Eggplant remains too soft after cooking

Increase the cooking time by 2 to 3 minutes and ensure the rounds are well spaced on the sheet.

Tomato sauce is too watery

Simmer for an additional 5 minutes over medium heat or add a small teaspoon of tomato paste.

The cheese does not melt

Check that the oven has reached 200°C and extend the cooking by 1 to 2 additional minutes.
