- 1 cucumber English Cucumber (sliced)
- 1 cup Cherry Tomatoes (halved (or use diced large tomato))
- 0.5 pepper Bell Pepper (sweet, any color, sliced)
- 0.5 onion Red Onion (medium, thinly sliced)
- 1 avocado Avocado (large, peeled, pitted, diced)
- 0.5 cup Kalamata Olives (sliced or whole)
- 4 oz Feta Cheese (crumbled)
- 3 tbsp Lemon Juice (freshly squeezed (about 1 lemon))
- 3 tbsp Extra Virgin Olive Oil (good quality)
- 1 clove Garlic (pressed)
- 0.5 tsp Salt (kosher or sea salt)
- 0.25 tsp Black Pepper (freshly ground)
Instructions
Prepare Lettuce
Rinse the romaine lettuce in ice‑cold water, spin it completely dry in a salad spinner, then cut the core out, halve the leaves, and chop into bite‑sized pieces.

Trim the ends of the English cucumber and slice it into thin half‑moons.
