Prep: 35 min | Cook: 672 hrs | Total: 673 hrs 5 min
Cost: $12.55 total, $2.09 per serving
Ingredients
- 3 lb Pork Belly (skin on, cut into a single piece)
- 1 cup Table Salt (regular household salt, not curing salt)
- 2 tbsp Paprika (sweet Hungarian or Spanish paprika; smoked optional)
- 1 tsp Chili Pepper Flakes (optional for mild heat)
- 1 ft Kitchen Twine (food‑grade cotton string for hanging)
Instructions
Apply Salt
Place the 3‑lb pork belly in a container and coat it generously on all sides with 1 cup of table salt, making sure the meat is completely covered.
Time: PT10M
Dry‑Salt Cure
Refrigerate (or place in a cold room) the salted pork belly for exactly 16 hours. This time is critical for proper curing without over‑salting.
Time: PT16H
Temperature: 34-40°F
Rinse and Pat Dry
Remove the pork belly, rinse off all salt under cold running water, and pat the surface completely dry with paper towels.
Time: PT10M
Season with Paprika (and Chili)
Generously rub the entire surface of the pork belly with 2 tbsp sweet paprika and, if desired, 1 tsp chili pepper flakes for a mild heat.
Time: PT5M
Create Hanging Point
Using a sharp knife, poke a hole through the center of the pork belly and thread kitchen twine through the hole, tying a secure loop for hanging.
Time: PT5M
Hang and Cure
Hang the pork belly in a cool, well‑ventilated area (ideally 34‑40°F with 65‑75% humidity) for 4 weeks. Check weekly for mold; a thin white bloom is normal and can be wiped away.
Time: PT672H
Temperature: 34-40°F
Slice and Taste
After 4‑5 weeks, remove the string, brush off excess paprika, and slice the pancetta thinly to taste. Trim any overly hard outer edges if desired.
Time: PT10M
Vacuum‑Seal for Storage
Vacuum‑seal the sliced pancetta (or larger pieces) in freezer‑grade bags and store in the refrigerator for up to 2 years, or in the freezer for the same period.
Time: PT5M
