- 2 tbsp Gochujang (Korean red pepper paste)
- 1 tbsp Sesame Seeds (toasted)
- 3 Green Onions (sliced)
- 1 cup Kimchi (chopped)
- 2 cups Cabbage (shredded; napa or green cabbage works)
- 1 Carrot (julienned)
- 1/4 cup Mayonnaise
- 1 Lime (cut into wedges for squeezing)
- 1 bunch Fresh Cilantro (roughly chopped for garnish)
- 8 Small Corn or Flour Tortillas (warm before serving)
Instructions
Marinate Beef
Thinly slice the flank steak, then in a large bowl combine soy sauce, sesame oil, brown sugar, rice vinegar, minced garlic, grated ginger, gochujang, sesame seeds, and sliced green onions. Add the beef, toss to coat evenly, cover, and refrigerate for at least 30 minutes or overnight for deeper flavor.

Make Kimchi Slaw
In a large bowl combine chopped kimchi, shredded cabbage, and julienned carrot. In a small bowl whisk together mayonnaise, rice vinegar, soy sauce, and sesame oil. Pour the dressing over the vegetable mixture, toss well, and refrigerate until ready to assemble.
