- 1 medium Yellow Onion (diced)
- 1 pound Ground Beef (80% lean)
- 0.5 pound Italian Sausage (hot, casings removed)
- 0.5 pound Italian Sausage (mild, casings removed)
- 3 cloves Garlic (minced (big scoop))
- 2 tablespoons Tomato Paste (regular)
- 28 ounces Diced Tomatoes (canned, undrained)
- 15 ounces Tomato Sauce (canned)
- 4 cups Chicken Stock (low‑sodium)
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- ½ teaspoon Red Chili Flakes
- 6 sheets Lasagna Noodles (broken into bite‑size pieces)
- 1 cup Ricotta Cheese (full‑fat)
- 1 cup Mozzarella Cheese (shredded)
- ½ cup Parmesan Cheese (grated)
- to taste Salt
- to taste Black Pepper
- 2 cups Fresh Spinach (roughly chopped)
- 1 leaf Fresh Basil Leaf (for garnish)
- 1 teaspoon Olive Oil (for finishing cheese mixture)
Instructions
Sauté Onion
Heat 2 tbsp olive oil in a large pot over medium heat. Add the diced onion, season with a pinch of salt and pepper, and cook, stirring occasionally, until the onion softens and becomes translucent but does not brown.

Brown Meat
Add the ground beef, hot Italian sausage, and mild Italian sausage to the pot. Break the meat up with the spoon and cook until fully browned and no longer pink, about 7 minutes.

Add Garlic & Tomato Paste
Stir in the minced garlic and tomato paste. Cook for 2 minutes, allowing the raw garlic flavor to mellow and the paste to darken slightly.

Incorporate Tomatoes
Add the canned diced tomatoes (with their juices) and tomato sauce. Mix well and let cook for another 2 minutes.
