- 200 g Dry Pasta (penne, fusilli, or spaghetti)
- 2 tbsp Olive Oil (extra‑virgin for searing and drizzling)
- 1 tsp Crushed Chili Flakes (adjust to heat preference)
- 1/4 cup Fresh Basil Leaves (packed, torn)
- 1 tsp Salt (for pasta water and seasoning)
- 1/2 tsp Black Pepper (freshly cracked)
Instructions
Preheat Oven
Set the oven to 400°F (200°C) and let it fully preheat.
Time: PT5M
Temperature: 400°F
Prepare Chicken
Pat the chicken breast dry with paper towels, then cut each breast in half lengthwise to create thinner pieces. Season both sides with salt and pepper.
Time: PT5M
Sear Chicken
Heat 1 tbsp olive oil in a skillet over medium‑high heat. Add the chicken pieces and sear 3‑4 minutes per side until golden brown but not fully cooked through.
Time: PT8M
Arrange Feta and Tomatoes
On a baking sheet, place the block of feta in the center. Scatter the cherry tomatoes around it, drizzle the remaining olive oil, and sprinkle the chili flakes, a pinch of salt, and pepper.
Time: PT5M
Bake Feta and Tomatoes
Transfer the baking sheet to the oven and bake for 15‑20 minutes, until the tomatoes are blistered and the feta is soft and beginning to melt.
Time: PT20M
Temperature: 400°F
Cook Pasta
While the feta bakes, bring a pot of salted water to a boil. Add the pasta and cook according to package directions until al dente, about 9‑10 minutes. Drain in a colander.
Time: PT10M
Smash Feta and Tomatoes
Remove the baking sheet from the oven. Using a fork, gently mash the feta and tomatoes together, leaving some chunky texture.
Time: PT2M
Combine All Elements
Return the drained pasta to the pot. Add the smashed feta‑tomato mixture, sliced seared chicken, and torn basil leaves. Toss everything together until evenly coated.
Time: PT5M
Serve
Plate the pasta while hot, garnish with a few extra basil leaves if you like, and enjoy immediately.
Time: PT0M
