- 2 Carrots (peeled and diced)
- 2 Celery Stalks (diced)
- 1 Yellow Onion (medium, diced)
- 1 cup Frozen Peas (thawed)
- 4 Tbsp Unsalted Butter (cut into pieces)
- 1/3 cup All-Purpose Flour (for roux)
- 2 cup Chicken Broth (low‑sodium)
- 1 cup Whole Milk (for a creamy sauce)
- 1 tsp Salt (or to taste)
- 1/2 tsp Black Pepper (freshly ground)
- 2 Store‑Bought Pie Crust (13‑inch double crust, thawed)
- 1 Egg (beaten, for egg wash)
Instructions
Cook the Chicken
Heat 2 Tbsp butter in a large skillet over medium heat. Add the cubed chicken, season with a pinch of salt and pepper, and sauté until just cooked through, about 5‑6 minutes. Transfer to a mixing bowl.
