- 2 Celery Stalks (diced)

- 1 cup Dried Lentils (green or brown, rinsed)
- 2 medium Potatoes (Yukon Gold or Russet, diced)
- 1 can (14 oz) Crushed Tomatoes (no added salt)
- 6 cups Vegetable Broth (can substitute chicken broth)
- 2 cups Fresh Spinach (roughly chopped)
- 1 tsp Dried Oregano
- 1 tbsp Balsamic Vinegar

Instructions
Prepare Vegetables
Dice the onion, carrot, and celery into uniform ½‑inch pieces. Mince the garlic and dice the potatoes.
