- 1/4 cup Raspberries (washed)
- 1/4 cup Strawberries (hulled and sliced)
- 1/4 cup Blueberries (washed)
- 2 flakes Edible Gold Leaf (for garnish; optional but adds visual wow factor)
Instructions
Prepare Mini Ice Cubes
Fill an ice cube tray with filtered water and place it in the freezer for at least 1 hour. For this recipe you only need about ½ cup of mini cubes, so you can use a small portion of a full tray.

Place the coconut on a sturdy surface, hold it firmly, and tap firmly with the back of a chef’s knife until it cracks. Pry the husk open and discard the outer “bathing suit.” Scoop out about ¼ cup of the white flesh with a spoon; set aside for garnish and chop the rest for the bowl.
