- 1,5 kg Waxy potatoes (type waxy) (cooked whole with skin, then mashed while hot)
- 1 c. à café Fine salt
- 0,5 c. à café Ground black pepper
- 0,25 c. à café Freshly grated nutmeg (freshly grated)
- 100 g Grated Parmesan (freshly grated)
- 150 g White ham (diced)
- 2 Eggs (large)
- 200 g Mozzarella (drained, pressed and rested 1 h before use)
- 50 g Fine breadcrumbs
- 30 g Butter (to grease the dish)
- 2 c. à soupe Extra virgin olive oil
- 1 c. à café Dried oregano (optional, for finishing)
Instructions
Cooking the potatoes
Place the whole potatoes (with skin) in a large pot of boiling water or in a steamer. Cook for 30 minutes until tender.

Cooling and peeling
Drain the potatoes, let them warm for 5 minutes, then peel them while still hot. Pass them through a potato ricer to obtain a smooth mash.

Seasoning the mash
In the bowl, add the salt, pepper, nutmeg and mix. Incorporate the grated Parmesan, diced white ham and eggs. Mix well until a homogeneous batter forms.

Preparing the dish
Generously butter the bottom and sides of a 26 cm gratin dish. Sprinkle the interior with breadcrumbs and tap to make them adhere.
