Chef Tips from the Video
- Use firm-fleshed potatoes (e.g., Roseval) so they hold their shape.
- Add a pinch of Espelette pepper with the paprika for a slight kick.
- Sprinkle a little breadcrumbs over the cheese before baking for an ultra‑crunchy top.
Troubleshooting
The potatoes remain hard after cooking.
Extend the cooking over medium heat while covered, or add a little water and simmer for an additional 5 minutes.
The cheese does not brown or stays pale.
Increase the oven temperature to 220°C for the last 2 minutes or place the dish under the broiler.
The sauce is too thick.
Stir in an extra tablespoon of water or broth and mix.
Storage
Refrigerator: Store the gratin in an airtight container for 2‑3 days in the refrigerator.
