    Time: PT5M

While the waffles cook, heat 150 ml of liquid cream in a small saucepan over low heat. Add 2 finely sliced shallots, 2 tablespoons chopped chives, 3 tablespoons apple cider vinegar and 1 tablespoon olive oil. Season with salt and pepper, then simmer 3‑4 minutes until slightly thickened.

  • Mixing bowl
  • Spatula or wooden spoon
  • Cheese grater
  • Pan or small saucepan
  • Paper towel
  • Kitchen scale or measuring cup
  • Chef's knife

Critical Steps — Do Not Skip

  • Melt the butter without burning it
  • Cut the potatoes into fine, uniform julienne
  • Do not wash the strips after cutting to retain the sticky starch
  • Properly grease the waffle iron
  • Precise cooking of 8‑10 minutes to achieve crispness

Chef Tips from the Video

  • Use firm-fleshed potatoes (Charlotte type) for more starch and better binding.
  • Add a small pinch of smoked paprika for a subtle smoky note.
  • Serve with a slice of smoked trout or haddock for a marine contrast.

Troubleshooting

Waffles too soft or soggy

Ensure the potato strips are not washed after cutting, increase the baking powder slightly (up to 8 g) and dry the strips well before mixing.

Waffles stick to the waffle iron

Generously grease the plates before each batch and, if needed, place a small piece of parchment paper between the batter and the plates.

Sauce separating

Cook the sauce over low heat, never bring it to a boil and add the cream gradually.

Storage

Refrigerator: Store the waffles in an airtight container for 2 days. Reheat in the oven at 180 °C to regain crispness.

Freezer: Wrap the waffles individually in plastic film then place them in a freezer bag; keep for up to 1 month. Defrost in the oven.

Room temperature: Consume immediately, otherwise the waffles lose their texture.

Make-Ahead Tips

  • Peel and cut the potatoes the day before, keep them in a bowl of cold water in the refrigerator.
  • Pre-mix the dry mixture (salt, pepper, leavening, cheese) and keep it in an airtight container.
  • The sauce can be prepared ahead and gently reheated before serving.
