Chef Tips from the Video
- Keep the zucchini skin for extra color and crunch.
- A drizzle of balsamic vinegar added to the tomatoes before baking adds a slight acidity that balances the cheese.
- Use garlic and herb Boursin for more flavor.
Troubleshooting
Sauce is too watery.
Cook for an additional 5 minutes or add a bit of grated cheese to thicken.
Zucchini are too soft.
Reduce cooking time to 15 minutes or cut the dice larger so they keep their texture.
Pasta sticks together.
Rinse quickly with cold water after draining and add a drizzle of olive oil.
Storage
Refrigerator: Store in an airtight container 2 to 3 days.
