Ingredients
- 250 g All-purpose flour (Sift to avoid lumps)
- 150 ml Whole milk (At room temperature)
- 60 g Unsalted butter (Melt over low heat)
- 3 unités Organic apples (Keep the skin on, cut into thin slices)
- 10 g Baking powder (About 2 teaspoons)
- 50 g Brown sugar (To coat the apples)
- 30 g White sugar (To incorporate into the eggs)
- 2 unités Eggs (At room temperature)
- 5 g Fresh grated ginger (Optional, about 1 teaspoon)
Instructions
Whisk the eggs with the sugar
Crack the 2 eggs into a bowl, add 30 g of white sugar and whisk with a mixer for about 5 minutes until the mixture becomes frothy and pale.

Incorporate the melted butter and milk
Melt 60 g of butter in a small saucepan over low heat, then pour it into the egg‑sugar mixture. Add 150 ml of milk and stir with a spatula until homogeneous.

Mix the dry ingredients
In a second bowl, sift 250 g of flour, add 10 g of baking powder and, if desired, 5 g of fresh grated ginger. Mix quickly with a spoon.

Combine the two preparations
Pour the dry mixture into the wet mixture and stir with a spatula until you obtain a smooth batter. Let rest for 5 minutes while you prepare the apples.

Wash the 3 apples, keep the skin on, cut them into quarters then into thin slices. Place them in a bowl and coat with 50 g of brown sugar, mixing well.
