Critical Steps — Do Not Skip
- Brown the potatoes without burning them
- Cook the shallots and bacon without carbonizing them
- Stir the eggs constantly to achieve a creamy texture
Chef Tips from the Video
- A splash of water when deglazing helps create a softer texture for the eggs.
- Using lightly salted butter adds a subtle depth of flavor without needing to add much salt.
- Fresh chives add a note of freshness that balances the bacon's richness.
Troubleshooting
The eggs are dry and rubbery
Reduce the heat, add a little water or extra cream and stir constantly.
The potatoes remain pale and undercooked
Cut the dice smaller or partially cover the pan during the first 5 minutes to steam them before browning.
The bacon is not crispy enough
Cook the bacon separately over medium‑high heat until it renders all its fat, then reincorporate.
Storage
Refrigerator: Store in an airtight container, consume within 2 days.
Freezer: Not recommended – the egg texture deteriorates after freezing.
Room temperature: Consume immediately, do not leave more than 2 hours at room temperature.
Make-Ahead Tips
- Cut the potatoes and keep them in cold water until cooking.
- Pre‑beat the egg mixture with the cream and spices and keep it in the refrigerator (max 1 hour).
- Sauté the bacon and shallots ahead of time, then reheat quickly before adding the eggs.
