Instructions
Boil Potato Slices
Peel the potatoes and cut them into ¼‑inch thick slices. Place the slices in a saucepan, cover with cold water, add a pinch of salt and bring to a boil. Reduce to a simmer and cook 10‑12 minutes until fork‑tender but not falling apart. Drain and set aside to cool slightly.

Prepare Mint‑Coriander Chutney
In a blender combine the mint leaves, coriander leaves, peeled ginger, green chili, black pepper, salt, and lemon juice. Blend until smooth, adding a splash of water if needed to reach a spreadable consistency.

Slice Fresh Vegetables
Thinly slice the cucumber, tomato, and red onion on the cutting board. Keep the slices uniform so the sandwich layers stay even.

Assemble the Sandwiches
Lay out four slices of bread. Spread a generous layer of chutney on each slice. On top, arrange a layer of boiled potato slices, followed by cucumber, tomato, and onion. Sprinkle each with a pinch of chaat masala. Top with the remaining bread slices. (Add a cheese slice on each if using.)
Time: PT5M
Grill the Sandwiches
Heat the griddle or skillet over medium‑high heat (about 350°F). Add a little butter or oil, then place a sandwich in the pan. Press gently with a spatula and grill 2‑3 minutes per side until the bread is golden and the interior is hot, creating distinct char lines.
Time: PT5M
Temperature: 350°F
Serve
Remove the sandwich, cut diagonally, and serve immediately while hot and crisp. Optionally garnish with extra chutney on the side.
