Critical Steps — Do Not Skip
- Blanch the broccoli only 2–3 minutes to keep it crisp.
- Shock and thoroughly dry the broccoli before adding the sauce.
- Toss the broccoli with the sesame‑garlic sauce while it is still slightly warm for maximum flavor absorption.
Chef Tips from the Video
- Use toasted sesame oil for a deeper, nutty flavor.
- Add a teaspoon of rice vinegar to the sauce for a subtle brightness.
- Garnish with thinly sliced green onions for extra color and aroma.
Troubleshooting
Broccoli is soggy or over‑cooked.
Reduce blanch time to 2 minutes and ensure an immediate ice‑water shock.
Sauce is too salty.
Add an extra teaspoon of sesame oil or a splash of water to mellow the salt.
Tofu falls apart and makes the dish watery.
Press the tofu for at least 10 minutes before crumbling to remove excess moisture.
Storage
Refrigerator: Store in an airtight container for up to 3 days.
Freezer: Not recommended; texture will become mushy.
Room temperature: Best served within 2 hours of preparation.
Make-Ahead Tips
- Blanch and shock the broccoli up to a day ahead; keep dry in the fridge.
- The sesame‑garlic sauce can be prepared 2‑3 days in advance and stored sealed.
