Chef Tips from the Video
- Add a pinch of ras el hanout with the spices to enhance the Moroccan profile.
- Replace green olives with black olives for a milder note.
- Serve the tagine with couscous or pita bread to soak up the sauce.
Troubleshooting
The sauce remains too liquid.
Extend the reduction by 5 to 10 minutes or add a small teaspoon of flour dissolved in cold water.
The chicken is not tender enough after the indicated time.
Continue baking at 180°C for an additional 5‑10 minutes, or cover with foil to prevent drying.
